Description

These mini cheesecakes combine the flavors of apple crisp and cheesecake, offering a cozy dessert perfect for sharing.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup apples, peeled and diced (preferably tart like Granny Smith)
  • 1 tsp cinnamon
  • 1/2 cup oatmeal
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup butter, melted
  • Mini graham cracker crusts, one per cheesecake


Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix cream cheese, sugar, and vanilla extract until smooth.
  3. Add sour cream and mix until combined.
  4. In another bowl, mix diced apples, cinnamon, oatmeal, flour, brown sugar, and melted butter to make the topping.
  5. Spoon the cheesecake mixture into mini graham cracker crusts.
  6. Top each cheesecake with the apple crisp topping.
  7. Bake for 25-30 minutes or until set, letting the edges firm while the centers remain slightly jiggly.
  8. Allow to cool and serve at room temperature or chilled, optionally garnishing with whipped cream or powdered sugar.

Notes
