Ingredients

- 1 cup broccoli florets
- 1 cup fresh blueberries
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup walnuts or almonds, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the spinach and broccoli, folding gently to mix.
- Add the blueberries, red onion, feta cheese, and nuts, scattering them on top.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until smooth.
- Pour the dressing over the salad and toss gently to combine.

Notes
For a heartier version, add cooked quinoa or farro. To soften broccoli, blanch briefly in boiling water.
