Description

A delicious and healthy meal featuring chicken, broccoli, and pasta, perfect for busy nights or meal prep.


Ingredients

  • 2 cups broccoli florets
  • 1 pound chicken breast, diced
  • 2 cups pasta (any type)
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese (optional for topping)


Instructions

  1. In a large pot, bring water to a boil. Add the pasta and cook according to package instructions. Drain and set aside.
  2. In a separate pan, heat olive oil over medium heat. Add the diced chicken, seasoning with salt and pepper. Cook until browned and cooked through.
  3. Stir in the broccoli florets and cook for about 4-5 minutes, until bright green.
  4. Add the cooked pasta and chicken broth to the pan. Stir well and let simmer for another 5 minutes.
  5. Top with Parmesan cheese if desired, and enjoy!

Notes

For added flavor, consider adding garlic or onion while sautéing the chicken, or try red pepper flakes for a spicy kick.
