- 1 lb chicken breast, diced
- 2 tablespoons Cajun seasoning
- 1 cup rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Season the diced chicken with Cajun seasoning and a little salt and pepper.
- Heat oil in a large skillet over medium heat. Add the chicken.
- Cook the chicken until it is cooked through and lightly browned, about 6-8 minutes. Remove and set aside.
- In the same skillet, add rice and chicken broth. Stir and bring to a boil.
- Reduce heat, cover, and simmer until the rice is tender and liquid is absorbed, about 15 minutes.
- Stir in heavy cream and Parmesan cheese. Mix well.
- Add the cooked chicken back into the skillet. Stir to combine and heat through for 2-3 minutes.
- Taste and adjust with salt and pepper. Serve hot, garnished with chopped parsley.
Notes
For creamier rice, use heavy cream at the end and stir gently. You can also swap chicken breast for boneless thighs for extra juiciness.
