Ingredients

1/2 cup (115 g) unsalted butter, softened

1/2 cup (100 g) packed brown sugar

1/4 cup (50 g) granulated sugar

3 tablespoons honey

1 large egg

1 teaspoon vanilla extract

1 1/4 cups (155 g) all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon fine salt

3 tablespoons white sesame seeds, lightly toasted

2 tablespoons white or black sesame seeds, for rolling tops


Instructions

1. In a mixing bowl, cream softened butter, brown sugar, and granulated sugar until light and slightly fluffy.

2. Beat in honey, then add the egg and vanilla extract, mixing just until smooth.

3. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.

4. Fold dry ingredients into the wet mixture until just combined, then stir in the toasted sesame seeds.

5. Cover the bowl and chill the dough for 30–45 minutes to firm up.

6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

7. Scoop tablespoon-sized portions of dough, roll into balls, and press the tops into the reserved sesame seeds.

8. Arrange on baking sheets with space to spread and bake 9–11 minutes, until edges are set and lightly golden but centers remain soft.

9. Let cookies cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra nutty flavor, toast the sesame seeds in a dry skillet over low heat until fragrant, then cool before using.
