- 2 chicken breasts, cut into chunks
- 1 cup bell peppers, diced
- 1 cup zucchini, sliced
- 1 cup broccoli florets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add garlic and sauté for 1 minute.
- Add chicken and cook until browned.
- Stir in vegetables and herbs, and season with salt and pepper.
- Cook until vegetables are tender and chicken is cooked through, about 10–15 minutes.
- Serve hot.
Notes
For added brightness, serve with a squeeze of lemon or a spoon of yogurt. You can swap chicken breasts for boneless thighs for richer flavor.
