Description

Delightful cookies filled with strawberries and covered in rich chocolate, perfect for family gatherings.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups gluten-free all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup strawberries, chopped
  • 1 cup semi-sweet chocolate, melted


Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, combine the softened butter, granulated sugar, and powdered sugar. Beat until light and fluffy, about 2-3 minutes.
  3. Add the eggs and vanilla extract, mixing on low speed until just combined.
  4. In a separate bowl, whisk together the gluten-free flour, baking powder, and salt. Gradually add to the wet ingredients, stirring until a dough forms.
  5. Gently fold in the chopped strawberries.
  6. Cover the dough with plastic wrap and refrigerate for about 30 minutes.
  7. Line baking sheets with parchment paper.
  8. Scoop the dough into balls (about 2 tablespoons each) and place on the baking sheets.
  9. Bake for 12-15 minutes, until edges are golden and tops are soft.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  11. Melt the chocolate and dip half of each cookie in it. Allow excess chocolate to drip off and place on parchment paper to set.
  12. Let the cookies sit at room temperature for 30 minutes to set the chocolate.

Store cookies in an airtight container at room temperature for 3-4 days or freeze for longer storage.
