- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup powdered sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups gluten-free all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup strawberries, chopped
- 1 cup semi-sweet chocolate, melted
Instructions
- Preheat your oven to 350°F.
- In a large bowl, combine the softened butter, granulated sugar, and powdered sugar. Beat until light and fluffy, about 2-3 minutes.
- Add the eggs and vanilla extract, mixing on low speed until just combined.
- In a separate bowl, whisk together the gluten-free flour, baking powder, and salt. Gradually add to the wet ingredients, stirring until a dough forms.
- Gently fold in the chopped strawberries.
- Cover the dough with plastic wrap and refrigerate for about 30 minutes.
- Line baking sheets with parchment paper.
- Scoop the dough into balls (about 2 tablespoons each) and place on the baking sheets.
- Bake for 12-15 minutes, until edges are golden and tops are soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Melt the chocolate and dip half of each cookie in it. Allow excess chocolate to drip off and place on parchment paper to set.
- Let the cookies sit at room temperature for 30 minutes to set the chocolate.

Store cookies in an airtight container at room temperature for 3-4 days or freeze for longer storage.
