Description

A delightful and moist chocolate sheet cake perfect for family gatherings and celebrations, topped with rich chocolate frosting.


Ingredients

  • 2 cups all-purpose flour (250 grams)
  • 1/2 cup cocoa powder (45 grams)
  • 2 cups granulated sugar (400 grams; use 1 3/4 cup for a less sweet cake)
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil (120 ml)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup milk (120 ml, whole milk is best; 2% works too)
  • 1/2 cup sour cream (120 ml, or plain Greek yogurt)
  • 3/4 cup freshly brewed coffee (180 ml, or boiling water)
  • 3/4 cup unsalted butter (168 grams)
  • 34 cups powdered sugar (330440 grams, sifted)
  • 1/2 cup cocoa powder (45 grams, sifted)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 45 tablespoons whipping cream (6075 ml)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 13×18-inch baking sheet.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  3. In another bowl, combine the vegetable oil, eggs, vanilla, milk, and sour cream. Whisk until blended.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined.
  5. Carefully stir in the hot coffee until the batter is smooth.
  6. Pour the batter into the prepared baking sheet and spread evenly. Bake for 20-25 minutes until a toothpick inserted comes out clean.
  7. While cooling, make the frosting by beating the butter until creamy, then gradually add the powdered sugar and cocoa until incorporated.
  8. Add in the vanilla and salt, then pour in the whipping cream and beat until fluffy.
  9. Once the cake is cooled, spread the frosting generously over the top.
  10. Slice into squares and serve with joy.

Notes

For extra richness, consider adding a scoop of vanilla ice cream on top when serving.
