A delightful and moist chocolate sheet cake perfect for family gatherings and celebrations, topped with rich chocolate frosting.

- 2 cups all-purpose flour (250 grams)
- 1/2 cup cocoa powder (45 grams)
- 2 cups granulated sugar (400 grams; use 1 3/4 cup for a less sweet cake)
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup vegetable oil (120 ml)
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup milk (120 ml, whole milk is best; 2% works too)
- 1/2 cup sour cream (120 ml, or plain Greek yogurt)
- 3/4 cup freshly brewed coffee (180 ml, or boiling water)
- 3/4 cup unsalted butter (168 grams)
- 3–4 cups powdered sugar (330–440 grams, sifted)
- 1/2 cup cocoa powder (45 grams, sifted)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 4–5 tablespoons whipping cream (60–75 ml)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 13×18-inch baking sheet.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
- In another bowl, combine the vegetable oil, eggs, vanilla, milk, and sour cream. Whisk until blended.
- Pour the wet mixture into the dry ingredients and gently stir until just combined.
- Carefully stir in the hot coffee until the batter is smooth.
- Pour the batter into the prepared baking sheet and spread evenly. Bake for 20-25 minutes until a toothpick inserted comes out clean.
- While cooling, make the frosting by beating the butter until creamy, then gradually add the powdered sugar and cocoa until incorporated.
- Add in the vanilla and salt, then pour in the whipping cream and beat until fluffy.
- Once the cake is cooled, spread the frosting generously over the top.
- Slice into squares and serve with joy.
Notes
For extra richness, consider adding a scoop of vanilla ice cream on top when serving.
