- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate ganache (for filling)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt until well combined.
- In another bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy.
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet.
- Gently press your thumb into the center of each ball to create a small well.
- Bake for 10-12 minutes, until the cookies are set but still soft.
- Allow them to cool slightly before filling each well with rich chocolate ganache.
- Let the cookies cool completely before serving.
Notes
Store leftover cookies in an airtight container at room temperature for up to a week. To freeze, layer cookies with parchment paper in a freezer-safe container.
