Description

Delicious and warm cinnamon cookies that evoke memories of family gatherings and cozy afternoons.


Ingredients

  • 6 tablespoons salted butter (softened)
  • 3/4 cup brown sugar (packed)
  • 1 1/2 tablespoons cinnamon (add more for a stronger spice if desired)
  • 1 cup salted butter (2 sticks, softened)
  • 1 2/3 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 1/2 cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 1/2 teaspoons cream of tartar
  • 1/3 cup granulated sugar (for rolling)
  • 1 1/2 tablespoons cinnamon (for rolling)


Instructions

  1. In a small bowl, mix together the 1/3 cup of granulated sugar and 1 1/2 tablespoons of cinnamon. Set aside.
  2. In a large mixing bowl, cream together the softened salted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add in the eggs, one by one, mixing thoroughly after each addition, then stir in the vanilla extract.
  4. Gradually stir in the flour, baking soda, kosher salt, and cream of tartar until just combined.
  5. Refrigerate the dough for 30 minutes.
  6. Preheat your oven to 350°F (175°C).
  7. Roll the dough into balls and coat each ball in the cinnamon-sugar mixture.
  8. Place the dough balls on a lined baking sheet, leaving space between them. Bake for 8-10 minutes, until the edges are golden but centers are soft.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

The cookies can be stored in an airtight container at room temperature. For prolonged freshness, refrigerate. Reheat in the microwave for 10-15 seconds to revive their softness.
