Instructions
- Mash cottage cheese in a mug until mostly smooth.
- Add egg and whisk to combine.
- Stir in coconut, almond flour, baking powder, vanilla, sweetener, and salt until a smooth batter forms.
- Microwave for 60–75 seconds until set.
- Cool slightly, then enjoy straight from the mug.
Notes
Add a pat of butter after microwaving for a silky finish. Customize with toppings like yogurt, berries, or nuts.
