Description

Delightful cookies filled with the tanginess of cranberries and the zest of oranges, perfect for the holiday season.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar, plus extra for coating
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup chopped fresh or dried cranberries
  • Zest of 1 orange
  • Juice of 1 orange
  • 1/2 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Add in vanilla extract, orange zest, and orange juice, mixing until well combined.
  4. In another bowl, whisk together the flour and salt.
  5. Gradually add the flour mixture to the wet mixture, stirring until just combined.
  6. Fold in the chopped cranberries.
  7. Scoop tablespoon-sized amounts of dough and roll them into balls.
  8. Place the balls on a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes, or until the bottoms are lightly golden.
  10. Let them cool slightly before rolling in powdered sugar.
  11. Allow to cool completely on a wire rack.
