- 2 pounds of potatoes
- 1/2 cup of heavy cream
- 1/4 cup of unsalted butter
- 2 large egg yolks
- Salt to taste
- White pepper to taste
- 1/2 cup of grated parmesan cheese (optional)
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop the potatoes, then boil them in salted water until tender.
- Drain the potatoes and return them to the pot.
- Mash the potatoes until smooth, then mix in the heavy cream and butter until fully incorporated.
- Stir in the egg yolks, salt, white pepper, and parmesan cheese if using.
- Use a piping bag fitted with a star tip to pipe the potato mixture onto a baking sheet lined with parchment paper in decorative shapes.
- Bake in the preheated oven for about 20-25 minutes or until the tops are golden brown.
- Garnish with fresh herbs if desired before serving.
Notes
Leftovers can be stored in an airtight container in the fridge and reheated in the oven for the best texture.
