Description
This 5 ingredient vegan chocolate cake is rich, moist, and ready in 35 minutes. No eggs, no dairy, just 5 pantry staples and pure chocolate comfort the whole family will love.
Ingredients
1½ cups all-purpose flour
1 cup granulated sugar
⅓ cup unsweetened cocoa powder
1 teaspoon baking soda
1 cup hot water
⅓ cup neutral oil (canola or vegetable)
1 teaspoon white vinegar or apple cider vinegar
Instructions
1. Preheat your oven to 350°F. Grease an 8-inch round or 8×8-inch square baking pan with oil and dust lightly with cocoa powder to coat the interior.
2. Whisk the flour, sugar, cocoa powder, and baking soda together in a large mixing bowl for at least 30 seconds until no cocoa clumps remain.
3. Pour the hot water, oil, and vinegar directly into the dry ingredients. Stir gently with a spatula just until no dry flour remains. Do not overmix. The batter will look thin.
4. Pour the batter into the prepared pan and bake at 350°F for 30 to 35 minutes. Insert a toothpick in the center. It should come out with just a few moist crumbs.
5. Remove from the oven and let the cake cool in the pan for 10 minutes before transferring to a wire rack. Slice and serve plain, dusted with cocoa powder, or topped with coconut cream.
Notes
Store covered at room temperature for up to 4 days or refrigerate for up to 7 days.
To freeze, slice into individual portions, wrap in parchment paper, place in a freezer bag, and freeze for up to 2 months. Thaw at room temperature for 30 minutes.
For a richer chocolate flavor, replace the hot water with hot brewed black coffee. The coffee taste disappears completely but the chocolate deepens.
To make vegan chocolate cupcakes, pour batter into a greased muffin tin two-thirds full and bake at 350°F for 18 to 22 minutes.
For a gluten-free version, substitute a 1:1 gluten-free baking flour blend. Do not use almond flour or coconut flour as direct swaps.
For an oil-free version, replace the oil with the same amount of unsweetened applesauce.
