Description

This cottage cheese beef bowl is a wholesome family dinner packed with 38g of protein. Seasoned beef, sweet potato, avocado, and hot honey ready in 30 minutes.


Ingredients

1 lb ground beef (85/15 or 90/10)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1 tsp chili powder

1/2 tsp ground cumin

1/2 tsp kosher salt

1/4 tsp black pepper

1 tbsp olive oil (for beef)

2 medium sweet potatoes, peeled and cubed

1 tbsp olive oil (for sweet potatoes)

1/2 tsp garlic powder (for sweet potatoes)

2 cups full-fat cottage cheese

2 avocados, sliced

3 to 4 tbsp hot honey

Fresh cilantro or sliced green onions, for garnish

Red pepper flakes, optional

1 lime, cut into wedges


Instructions

1. Preheat oven to 425°F. Toss sweet potato cubes with olive oil, garlic powder, salt, and pepper. Spread on a parchment-lined baking sheet in a single layer and roast for 25 to 30 minutes, flipping halfway, until edges are golden and caramelized.

2. Heat a large skillet over medium-high heat and add olive oil. Add ground beef and break apart with a wooden spoon. After 3 minutes, add all spices. Cook 5 to 7 more minutes until beef is fully browned and fragrant. Add a splash of water if the pan looks dry.

3. For a silky base, blend cottage cheese in a food processor for 30 seconds until smooth. You can skip this step and use it straight from the container if you prefer the curds.

4. Spoon a generous layer of cottage cheese into the bottom of each serving bowl. Add a scoop of seasoned beef, a portion of roasted sweet potatoes, and several slices of fresh avocado on top.

5. Drizzle each bowl generously with hot honey, squeeze fresh lime juice over the top, and finish with red pepper flakes and fresh cilantro. Serve immediately while the beef and sweet potato are warm.

Notes

Storage: Store beef and sweet potatoes separately in airtight containers in the refrigerator for up to 4 days. Add cottage cheese and avocado fresh at each serving. Reheat beef and sweet potatoes for 90 seconds in the microwave before assembling.

Substitutions: Use cauliflower rice instead of sweet potato for a low-carb version. Ground turkey works well in place of beef. Low-fat cottage cheese can replace full-fat.
