- 1/2 cup Land O’Lakes Butter (1 stick, softened)
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup eggnog
- 2 teaspoons rum or 1 teaspoon rum extract
- 3 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground nutmeg
- 1/2 teaspoon salt
- 1 cup powdered sugar
- 1 teaspoon rum or 1/2 teaspoon rum extract (for glaze)
- 2–3 tablespoons eggnog (for glaze)
Instructions
- Preheat your oven and line a baking sheet with parchment.
- Cream the butter and granulated sugar until smooth and glossy.
- Add eggs one at a time, beating well, then stir in eggnog and rum.
- Fold in flour, baking powder, nutmeg, and salt until the dough holds together.
- Shape the dough into two logs about 12 inches long and 2 inches wide on the baking sheet.
- Bake until golden and set, about 25-30 minutes. Let cool slightly.
- Slice the logs diagonally into 1/2-inch thick pieces and return to the oven for a second bake until crisp, about 10-15 minutes.
- Whisk together powdered sugar, rum, and eggnog for the glaze.
- Dip each biscotti in the glaze or spoon it over the top, then let set before serving or storing.
Notes
These biscotti are perfect for dunking and can be gifted in jars. They stay crisp for up to two weeks when stored properly.
