Description

A quick and healthy dish combining whole wheat pasta, chicken, and a creamy garlic Parmesan sauce.


Ingredients

  • 8 oz whole wheat pasta
  • 1 lb lean chicken breast, diced
  • 1 cup Greek yogurt
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Cook the whole wheat pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken breast, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes.
  3. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  4. Reduce heat to low and stir in Greek yogurt and grated Parmesan cheese. Mix until creamy.
  5. Add the cooked pasta to the skillet and toss until well combined.
  6. Adjust seasoning to taste.
  7. Serve warm, garnished with fresh parsley if desired.

Notes

Use room-temperature Greek yogurt to avoid curdling when adding to hot pan. Cook on low heat and stir gently until smooth.
