Ingredients

  • 2 tablespoons unsalted butter
  • 4 ounces cream cheese
  • 1/4 cup heavy whipping cream
  • 1 cup shredded sharp cheddar cheese
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 4 pieces low-carb tortillas
  • 1 cup sour cream
  • 1 cup shredded lettuce
  • 1 medium tomato
  • 1 cup extra cheddar cheese
  • 1/4 cup cilantro
  • 1/2 cup jalapeño slices (optional)
  • 1 tablespoon olive oil


Instructions

  1. In a small pan, melt butter over low heat. Stir in cream cheese until smooth.
  2. Pour in heavy whipping cream and mix, then stir in shredded cheddar until the sauce is smooth. Keep warm.
  3. Heat olive oil in a skillet over medium-high heat. Cook ground beef until browned. Drain excess fat and stir in taco seasoning and water. Cook for 2 minutes.
  4. Warm a tortilla in a dry pan for 10–15 seconds on each side to make it flexible. Optionally, toast one tortilla until golden.
  5. Lay a warm tortilla flat. Add cheese sauce, then a layer of beef, extra cheddar, lettuce, tomato, cilantro, and jalapeño slices.
  6. Fold the tortilla edges towards the center to make a tight wrap.
  7. Heat a nonstick pan over medium heat with a little butter. Place the folded side down and cook for 2–3 minutes until golden. Flip and cook for 2 more minutes until crisp.
  8. Let sit for 1 minute, then serve hot with sour cream or Greek yogurt.

Notes

Use warmed tortillas to avoid cracks, and try different fillings for variety.
