A crunchy, cheesy meal you can enjoy without the carbs, perfect for quick dinners or low-carb snacks.

- 2 tablespoons unsalted butter
- 4 ounces cream cheese
- 1/4 cup heavy whipping cream
- 1 cup shredded sharp cheddar cheese
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 4 pieces low-carb tortillas
- 1 cup sour cream
- 1 cup shredded lettuce
- 1 medium tomato
- 1 cup extra cheddar cheese
- 1/4 cup cilantro
- 1/2 cup jalapeño slices (optional)
- 1 tablespoon olive oil
Instructions
- In a small pan, melt butter over low heat. Stir in cream cheese until smooth.
- Pour in heavy whipping cream and mix, then stir in shredded cheddar until the sauce is smooth. Keep warm.
- Heat olive oil in a skillet over medium-high heat. Cook ground beef until browned. Drain excess fat and stir in taco seasoning and water. Cook for 2 minutes.
- Warm a tortilla in a dry pan for 10–15 seconds on each side to make it flexible. Optionally, toast one tortilla until golden.
- Lay a warm tortilla flat. Add cheese sauce, then a layer of beef, extra cheddar, lettuce, tomato, cilantro, and jalapeño slices.
- Fold the tortilla edges towards the center to make a tight wrap.
- Heat a nonstick pan over medium heat with a little butter. Place the folded side down and cook for 2–3 minutes until golden. Flip and cook for 2 more minutes until crisp.
- Let sit for 1 minute, then serve hot with sour cream or Greek yogurt.
Notes
Use warmed tortillas to avoid cracks, and try different fillings for variety.
