Description

A quick weeknight meal combining juicy chicken with vibrant Mediterranean vegetables, olives, and feta cheese.


Ingredients

Scale
  • 1.5 lbs chicken breasts, boneless & skinless — cut into bite-sized pieces
  • 3 tbsp extra virgin olive oil (divided for cooking)
  • Salt & black pepper (to taste)
  • 2 medium zucchini — sliced into half-moons
  • 2 red bell peppers — diced into chunks
  • 1 large red onion — sliced into strips
  • 2 cups cherry tomatoes — halved
  • 1 cup Kalamata olives — pitted and halved
  • 4 cloves garlic — minced
  • 1/4 cup sun-dried tomatoes — chopped
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1 lemon — juice only
  • 1/2 cup feta cheese — crumbled
  • 2 tbsp fresh parsley (optional garnish)


Instructions

  1. Prep all ingredients: chop veggies, halve tomatoes, pit and halve olives, and cut chicken into bite-size pieces.
  2. Season chicken with salt, pepper, 1 tsp dried oregano, and 1 tsp olive oil. Let sit 5 minutes.
  3. Heat 1.5 tbsp olive oil in a large skillet over medium-high heat. Add chicken in one layer. Sear until golden and cooked through, about 4–6 minutes, turning once. Remove chicken to a plate.
  4. Add remaining 1.5 tbsp olive oil to the pan. Sauté onion and garlic 2 minutes until soft.
  5. Add zucchini and bell peppers. Cook for 4–5 minutes until tender-crisp.
  6. Stir in cherry tomatoes, sun-dried tomatoes, olives, and remaining oregano, basil, and thyme. Cook for 2 minutes.
  7. Return chicken to the pan. Toss everything together and cook for 1–2 minutes to combine flavors.
  8. Add lemon juice and taste. Adjust salt and pepper. Sprinkle with feta and fresh parsley before serving.

Notes

Serve hot over rice, quinoa, or with warm pita bread. For extra flavor, marinate and grill the chicken before cooking.
