Ingredients

- ¾ cup unsalted butter, softened
- 1 cup packed brown sugar
- 1 large egg
- ¼ cup dark molasses
- 2 ¼ cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ¼ teaspoon salt
- ½ cup granulated sugar, for rolling
Instructions
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- Cream the softened butter and brown sugar together until pale and fluffy.
- Add the egg and molasses to the butter mixture and beat until smooth.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, and salt.
- Slowly add the dry ingredients to the wet mixture, stirring until just combined.
- Cover the dough and chill in the refrigerator for 30 to 60 minutes.
- Roll tablespoon-sized balls of dough in granulated sugar.
- Arrange the dough balls on the prepared baking sheets, two inches apart.
- Bake for 8 to 10 minutes until edges are set and tops look matte.
- Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For softer cookies, bake for a shorter time and let cool on the baking sheet.
