Description

A comforting and nostalgic soup made with pastina pasta, fresh vegetables, and aromatic broth, perfect for cozy family dinners.

Ingredients

Scale
  • 1 cup pastina pasta
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat a little olive oil over medium heat. Add the onions, carrots, and celery, sauté until tender.
  2. Add the garlic and cook for another minute.
  3. Pour in the broth and bring to a boil.
  4. Add the pastina and cook according to package instructions until al dente.
  5. Season with salt and pepper and adjust to taste.
  6. Serve hot, topped with Parmesan cheese and fresh parsley.

Notes

For added brightness, consider a splash of fresh lemon juice or a pinch of nutmeg. Homemade broth enhances the flavor significantly.
