Delicious peppermint biscotti perfect for sharing with family and friends during the holidays.
Ingredients

- 1/2 cup unsalted butter (1 cube, softened)
- 3 pieces eggs
- 1 cup sugar
- 2 teaspoons peppermint extract
- 3 1/4 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 3/4 cup crushed peppermint candies
- 1 cup white chocolate chips (6 ounces)
- 1 tablespoon shortening
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Cream the softened butter and sugar until light and fluffy, about 3–4 minutes.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the peppermint extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually incorporate the dry mixture into the wet mixture.
- Fold in the crushed peppermint candies and white chocolate chips.
- Turn the dough onto a lightly floured surface and shape it into a log about 12 inches long and 3–4 inches wide.
- Transfer the log to the lined baking sheet, spacing it about 4 inches apart.
- Bake for 25 minutes, until golden on the edges.
- Let it cool for 10 minutes on the baking sheet.
- Using a sharp knife, cut the log into 1-inch thick slices.
- Arrange the slices cut-side down on the baking sheet.
- Return to the oven and bake for an additional 15–20 minutes.
- Allow the biscotti to cool completely on a wire rack.
- Melt the shortening and white chocolate chips together until smooth.
- Drizzle the melted chocolate over the cooled biscotti and let it set before serving.
Notes
Store biscotti in an airtight container at room temperature for up to two weeks. For longer storage, wrap individually and freeze for up to three months.
