Description
Pickled candied jalapeños (cowboy candy) simmered in sweet-spicy syrup. Perfect burger topping and snack.
Ingredients
1 lb fresh jalapeños (red preferred)
2 cups granulated sugar
1 cup apple cider vinegar
1 cinnamon stick
1 tsp mustard seeds
1/2 tsp celery seeds
Instructions
1. Slice jalapeños into 1/4-inch rings (wear gloves).
2. Combine sugar, vinegar, and spices in saucepan; boil until sugar dissolves.
3. Add sliced jalapeños; simmer 4 minutes until slightly tender.
4. Pack hot peppers into sterilized pint jars.
5. Cover with boiling syrup; process in water bath 10 minutes.
Notes
Use red jalapeños for natural sweetness.
Perfect for smoky chipotle burgers and buffalo wings.
Refrigerator pickles last 3 months; canned last 1 year.
Wear gloves to avoid chili burn.
