- 1/2 cup graham cracker crumbs

- Cocoa powder or additional graham cracker crumbs for rolling
Instructions
- In a mixing bowl, combine the pumpkin puree, softened cream cheese, powdered sugar, vanilla extract, and pumpkin pie spice.
- Mix with a sturdy spoon or electric mixer until glossy and smooth, scraping the sides for a silky mixture.
- Refrigerate the mixture for about 30 minutes to firm up.
- Scoop out small amounts of the mixture and roll them into bite-sized balls.
- Roll each ball in cocoa powder or graham cracker crumbs to coat.
- Place the balls on a baking sheet lined with parchment paper and chill again for about 30 minutes before serving.
- Serve them straight from the fridge or let them sit for a few minutes to soften slightly.
