Description

These Bang Bang Salmon Bites are crispy salmon cubes tossed in a sweet-spicy sauce. They make a quick weeknight dinner or a fun party snack.


Ingredients

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish


Instructions

  1. Preheat the oven to 425°F (220°C) or set the air fryer to 400°F (200°C).
  2. Toss salmon cubes with garlic powder, smoked paprika, salt, and pepper in a bowl.
  3. Roll salmon cubes in panko until lightly coated. Drizzle with 1 tbsp olive oil or spray lightly.
  4. Arrange on a baking sheet or air fryer basket in a single layer. Bake for 10–12 minutes or air-fry for 8–10 minutes until golden and cooked through.
  5. Whisk mayo, sweet chili sauce, sriracha, honey (if using), and lime juice in a small bowl. Taste and adjust heat.
  6. Place jasmine rice in bowls. Add shredded cabbage, carrots, avocado slices, and green onions. Top with crispy salmon bites. Drizzle bang bang sauce over the salmon. Garnish with cilantro and sesame seeds.

Notes

Use fresh, firm salmon for easy cubing. Pat salmon dry to help panko stick. Light oil spray helps the panko brown quickly.
