- 1 teaspoon baking soda
- 1 tablespoon ground ginger

- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1/2 cup molasses
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt until evenly combined.
- In a separate bowl, beat the softened butter, granulated sugar, and brown sugar until fluffy.
- Add the egg, molasses, and vanilla extract to the butter mixture and mix well until combined.
- Gradually add the flour mixture to the wet ingredients, stirring until a soft dough forms.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F (175°C).
- On a floured surface, roll out the dough to about 1/4 inch thickness and cut out shapes with a cookie cutter.
- Place the cookies on a lined baking sheet, leaving space between each one.
- Bake for 8-10 minutes until the edges are golden.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store uneaten cookies in an airtight container at room temperature. For longer storage, freeze the cookies after cooling.
