Description

Ingredients

Scale
  • 1 medium head of cabbage, chopped
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves of garlic, minced
  • 6 cups vegetable broth
  • 1 can of diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. Chop the vegetables and set your mise en place.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, carrots, and celery; sauté until softened, about 5-7 minutes.
  4. Add garlic and sauté for another minute.
  5. Stir in chopped cabbage, diced tomatoes, vegetable broth, and thyme.
  6. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until cabbage is tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, optionally garnished with fresh parsley or a drizzle of olive oil.

Notes
