- 1 medium head of cabbage, chopped
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves of garlic, minced
- 6 cups vegetable broth
- 1 can of diced tomatoes
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Chop the vegetables and set your mise en place.
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until softened, about 5-7 minutes.
- Add garlic and sauté for another minute.
- Stir in chopped cabbage, diced tomatoes, vegetable broth, and thyme.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until cabbage is tender.
- Season with salt and pepper to taste.
- Serve hot, optionally garnished with fresh parsley or a drizzle of olive oil.
Notes
This soup can be varied by adding beans or farro, and adjusting herbs to taste. It freezes well for future meals.
