Ingredients

- 2 ½ sticks butter (1 cup & 4 tablespoons, softened)
- 1 cup granulated sugar
- 1 egg
- 1 egg yolk
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon fine salt
Instructions
- Preheat the oven to 325°F (163°C) and prepare baking sheets with parchment paper.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Add the egg, egg yolk, and vanilla extract; beat until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Add half of the flour mixture to the butter mixture and mix on low speed. Once the flour is nearly absorbed, add the remainder and mix until just combined.
- Roll out about a quarter of the dough on a lightly floured surface to ¼ inch thickness.
- Cut using desired cookie cutters and place on the prepared tray. If decorating, sprinkle sprinkles on now.
- Bake for 11-13 minutes, checking at 10 minutes for doneness.
- Cool on the pan for 5 minutes before transferring to a baking rack. Decorate as desired.
Notes
Store cookies in an airtight container at room temperature for up to a week, or freeze them for up to three months.
