Description

Ingredients

  • 3 to 4 pounds beef roast (chuck or round)
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, cubed
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dried thyme
  • Salt and pepper to taste


Instructions

  1. Heat the vegetable oil in a skillet over medium-high heat. Sear the beef roast on all sides until browned.
  2. Place the chopped onion, garlic, carrots, and potatoes in the slow cooker. Add the seared beef roast on top.
  3. In a bowl, mix the beef broth, Worcestershire sauce, thyme, salt, and pepper. Pour this mixture over the roast and vegetables in the slow cooker.
  4. Cover and cook on low for 8 hours or until the beef is tender and falls apart.
  5. Serve warm, spooning the gravy over the roast and vegetables.
