- 2 tablespoons vegetable oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, cubed
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon dried thyme
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a skillet over medium-high heat. Sear the beef roast on all sides until browned.
- Place the chopped onion, garlic, carrots, and potatoes in the slow cooker. Add the seared beef roast on top.
- In a bowl, mix the beef broth, Worcestershire sauce, thyme, salt, and pepper. Pour this mixture over the roast and vegetables in the slow cooker.
- Cover and cook on low for 8 hours or until the beef is tender and falls apart.
- Serve warm, spooning the gravy over the roast and vegetables.
