Description

A warm and hearty vegetable barley soup filled with vibrant flavors and family memories, perfect for cozy evenings.


Ingredients

  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 2 cups spinach, fresh
  • 3 cloves garlic, minced
  • 0.5 cups pearl barley
  • 6 cups vegetable broth
  • 2 teaspoons thyme, dried
  • to taste salt


Instructions

  1. Wash pearl barley under cold water.
  2. Chop carrots, celery, and onion into small pieces.
  3. Mince the garlic cloves.
  4. In a large pot, heat olive oil over medium heat and sauté the onions until translucent.
  5. Add garlic and sauté until fragrant.
  6. Stir in carrots and celery; cook for about five minutes until softened.
  7. Pour in the vegetable broth and bring to a boil.
  8. Add pearl barley and dried thyme, and season with salt.
  9. Reduce heat to low and simmer for about 30 minutes.
  10. Add fresh spinach and stir gently, cooking for five more minutes.
  11. Ladle soup into bowls and serve warm.
