Ingredients

- 2 cups carrots, chopped
- 1 cup celery, chopped
- 1 cup onion, chopped
- 2 cups spinach, fresh
- 3 cloves garlic, minced
- 0.5 cups pearl barley
- 6 cups vegetable broth
- 2 teaspoons thyme, dried

Instructions
- Wash pearl barley under cold water.
- Chop carrots, celery, and onion into small pieces.
- Mince the garlic cloves.
- In a large pot, heat olive oil over medium heat and sauté the onions until translucent.
- Add garlic and sauté until fragrant.
- Stir in carrots and celery; cook for about five minutes until softened.
- Pour in the vegetable broth and bring to a boil.
- Add pearl barley and dried thyme, and season with salt.
- Reduce heat to low and simmer for about 30 minutes.
- Add fresh spinach and stir gently, cooking for five more minutes.
- Ladle soup into bowls and serve warm.
