Description
Try the African banana trick, a heritage fritter recipe made with ripe bananas and cassava, crispy and easy.
Ingredients
4 to 6 very ripe bananas, peeled
1 pound cassava, peeled and grated (or 1 cup cornmeal)
1 teaspoon salt
Oil for frying, 2 to 3 inches depth
Instructions
1. Mash the ripe bananas in a large bowl until mostly smooth.
2. Peel and finely grate the cassava, then squeeze out excess moisture.
3. Combine the mashed banana, grated cassava, and salt into a thick mixture.
4. Heat oil to 350 degrees Fahrenheit and fry small scooped balls for about 10 minutes until golden.
5. Drain on paper towels and serve warm.
Notes
Store leftover fritters in the fridge for up to 3 days or freeze for up to a month.
Reheat in the oven at 375 degrees for 8 minutes to restore crispness.
