Description
This cucumber melon salad is a crisp, refreshing summer side made with honeydew, cucumber, feta, mint, and a bright lime dressing.
Ingredients
4 cups honeydew melon, cubed or balled
2 cups cucumber, sliced into half moons or thick rounds
1/2 cup crumbled feta cheese
1/4 cup thinly sliced red onion
2 tablespoons chopped fresh mint
1 tablespoon chopped fresh basil
2 tablespoons extra virgin olive oil
1 tablespoon fresh lime juice
1 teaspoon honey
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
Instructions
1. Cut the honeydew melon into bite-size cubes or use a melon baller for round pieces.
2. Wash and slice the cucumber into half moons or thick rounds. If needed, scoop out large seeds.
3. Whisk together the olive oil, lime juice, honey, salt, and black pepper in a small bowl or jar.
4. Add the melon, cucumber, red onion, mint, and basil to a large bowl. Pour the dressing over the top and toss gently.
5. Fold in the feta last and serve right away or chill briefly before serving.
Notes
Use the sweetest melon you can find for the best flavor.
Keep the dressing light so the salad stays crisp and juicy.
Add arugula, watermelon, cantaloupe, or a drizzle of balsamic glaze for variations.
Prepare the ingredients ahead of time, but toss just before serving.
