Description
This chicken broccoli rice casserole is creamy, cheesy, and baked in one dish. Chef Elise’s tested family recipe is ready in under an hour.
Ingredients
1.5 lbs boneless skinless chicken breasts, cut into 1-inch pieces
1.5 cups long grain white rice, uncooked
3 cups small broccoli florets, fresh or thawed frozen
1 can (10.5 oz) cream of chicken soup
2.5 cups low-sodium chicken broth
1 cup sour cream
1.5 cups shredded sharp cheddar cheese, divided
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
Optional: 1/2 cup panko breadcrumbs mixed with 1 tbsp melted butter
Instructions
1. Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
2. In a large bowl, whisk together the cream of chicken soup, chicken broth, sour cream, garlic powder, onion powder, paprika, salt, and pepper until smooth. Stir in 1 cup of shredded cheddar.
3. Add raw chicken pieces and uncooked rice to the sauce. Stir well until fully coated. Pour into the prepared baking dish and spread flat. Nestle broccoli florets throughout, pressing them gently into the liquid.
4. Cover the dish tightly with aluminum foil. Bake covered for 45 minutes.
5. Remove foil. Sprinkle remaining cheddar and optional panko topping over the surface. Return to oven uncovered for 10 to 15 minutes until cheese is golden and bubbly.
6. Remove from oven and rest for 10 minutes before serving. Scoop and serve directly from the dish.
Notes
Storage: Refrigerate in an airtight container for up to 4 days. Reheat with a splash of chicken broth to restore creaminess.
Freezing: Freeze fully baked and cooled casserole for up to 2 months. Thaw overnight in the refrigerator before reheating.
Shortcut: Swap raw chicken for 2 cups shredded rotisserie chicken and reduce covered bake time to 35 minutes.
Rice tip: Use long grain white rice only. Instant or quick-cook rice turns mushy.
