Ingredients
1 medium head cauliflower (about 4 cups riced)
1 large egg
1 cup shredded mozzarella cheese, divided
1/4 cup grated parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/2 cup pizza or marinara sauce
3 oz turkey pepperoni slices
Optional: fresh basil, red pepper flakes, sliced mushrooms
Instructions
1. Rice the cauliflower into a fine texture using a food processor.
2. Cook the riced cauliflower until tender, then let it cool.
3. Squeeze out as much moisture as possible using a clean towel.
4. Mix with egg, half the mozzarella, parmesan, garlic powder, oregano, and salt, then press into a thin crust and pre-bake at 425 degrees Fahrenheit for 15 to 20 minutes.
5. Top with sauce, remaining mozzarella, and turkey pepperoni, then bake another 8 to 10 minutes until melted.
Notes
Store leftovers in the fridge for up to 3 days.
Reheat in the oven or air fryer to help restore crispness.
Pre-bake the crust a day ahead and refrigerate for a faster pizza night.
