Description

Learn how to bloom gelatin correctly with this simple, tested method for silky, clump-free gels every time.

Ingredients

1 envelope (about 1/4 oz) unflavored gelatin powder

1/4 cup cold water

Optional: cold fruit juice, herbal tea, or broth in place of water

Instructions

1. Measure 1/4 cup cold water or liquid into a small bowl.

2. Sprinkle gelatin powder evenly across the surface of the liquid.

3. Let it sit undisturbed for 3 to 5 minutes without stirring.

4. Check that the gelatin looks soft, swollen, and jelly-like.

5. Add the bloomed gelatin to warm liquid between 140 and 180 degrees Fahrenheit and whisk gently until fully clear.

Notes

Store bloomed and dissolved gelatin in the fridge for up to 5 days.

Sheets bloom the same way but need 5 to 10 minutes and should be squeezed of excess water before dissolving.
